Brown Sugar Lemon Squares

Hey Everyone!

If you follow me on Instagram and/or Facebook, then you probably saw that I was doing a little baking a few nights ago. I told you all that if the recipe turned out good, that I would share it on the blog. Well, good news….the hubby gave it two thumbs up! If you are a fan of lemon flavored desserts, then I think you’ll probably like this one as well!

Lemon Bar Recipe

These Brown Sugar Lemon Squares are just a little bit tart & just a little bit sweet…it’s the perfect blend! I actually got this recipe from a insert called “Relish” that was in our local newspaper. I found out later after reading it a bit more that they actually have a website that you can check out HERE. If you are looking for the direct link to this particular recipe, you can find it HERE.

Ingredients for Crust:
12 tablespoons (1 1/2 sticks) frozen butter
1/4 teaspoon coarse salt
2/3 cup light brown sugar
1 3/4 cups all-purpose

Preheat oven to 350 degrees. In a large bowl, combine flour, sugar, and salt. Mix thoroughly. Using the large holes of a cheese grater, grate the frozen butter and add it to the flour mixture.

Using a fork, mix the butter into flour mixture until it resembles coarse meal. I had to check Google images to see what coarse meal actually looked like, so I thought I would provide you with an image so you that you don’t have to do the same. Some of you more experienced bakers out there already know what it looks like! 🙂

Then pour the butter/flour mixture into an ungreased 13 x 9 inch baking dish, spread it out & press it into the dish using your fingers. Bake for 20 minutes.

Ingredients for Filling:
3 tablespoons all-purpose flour
4 eggs, beaten
3/4 cup fresh lemon juice
1 1/3 cup sugar

Combine above ingredients in a large bowl and whisk well. When crust is done baking, add filling to the top of the warm crust. Bake for another 20 minutes or until filling is set/firm. Set aside to cool. Sprinkle with powdered sugar before serving.

  1. I have never grated frozen butter before, when I first looked at the photo it looked like shredded cheese! lol! Then, I saw you had grated the butter. I am loving your recipes you have been posting, I def. need to pin this to try sometime this Spring. Yum!

    I just made these and they are delicious! The only thing I did different was make the crust in my food processor. I just cut the frozen butter into cubes and pulsed with the other ingredients until it was crumbly. A perfect summer dessert!

  9. So I want to make this but only came out with 1/3 cup fresh lemon juice. Do u think that will be a problem?

      I think you will probably need more lemon juice than that. If you have bottled lemon juice, that should work too.

  10. My friend gave me four beautiful lemons from her lemon tree. What was I going to do with four lemons? Make BROWN SUGAR LEMON SQUARES!!! This recipe is DELISH and so easy!!! I made these little bit of heaven bites in a 9X13 pan lined with parchment paper. I cut the parchment paper so that it hung over the sides of the pan. When the lemons squares were cool, I lifted them out do the pan (no messy clean up) peeled away the parchment paper and cut them in perfect bite size pieces with a very sharp knife. Right before serving them, I lightly dusted them with powdered sugar. DELISH! Thanks for sharing.
